According to instructor Emily Cowdrey, her class was given a supply of eggplant and decided to prepare it for their trip to the luncheon. What they brought the seniors was an eggplant teriyaki rice bowl. She said it was their take on the classic poke-bowl, featuring rice. baby spinach, marinated teriyaki eggplant and pickled cucumbers, with various garnishments. Cowdrey said her students were also assigned to interview the seniors to learn more about their lives. The luncheon project is hosted by Central Valley Community Resources.
